Doner Kebab
published onDoner Kebab is basically a giant meatball that you cut into slices. You can use any blend of meat you would like for this recipe, it is not “traditional” or “authentic” in any way. For this recipe I will be using a blend of lamb and beef as an example but you may use any combination you wish.

Ingredients
- 500g Lamb Mince (20% fat content or higher)
- 500g Beef Mince (20% fat content recommended)
- 250g Bacon (As much fat as possible) OR Liver
- 1 Large Onion
- Cinnamon
- Coriander
- Cumin
- Oregano
- Paprika
Equipment
- Food Processor
- For steps requiring a food processor you can do the equivalent by hand. However this recipe is intended to be “quick and easy” so I will be using a food processor.
Directions
- Chop onion into small chunks.
- Chop bacon into similar sized chunks
- Blend onion and bacon in food processor until they are a paste like consistency.
- Add half of your beef mince.
- Add spices in proportions to your taste.
- Add half of your lamb mince.
- Blend until consolidated.
- Add remaining minced meat.
- Blend again until consolidated.
- Pack the meatball tightly in a mixing bowl, cover and freeze for 1 hour.
- Remove from freezer and work into a “kebab shap” wrap in aluminium foil.
- Roast in preheated oven at 180°C for 80 minutes.
- Remove foil and roast for 15 minutes.
- Turn the kebab over and roast for a further 15 minutes.
- The kebab is now ready to be sliced and served.
- You can crisp each slice up in a pan if you prefer. (Recommended)
Notes
- You can use any blend of meat you would like. For example beef and chicken, lamb and beef, etc. Choose a pairing you like.
- This is literally a meatball recipe.
- Add other spices as you prefer.
- Pairs well with mint yoghurt sauce or a chilli sauce of your liking.
- You can use Liver instead of or in addition to the bacon. Just use it where the recipe calls for bacon.
